Master The Art Of Stew Chicken

Juliet demonstrates how to make Ugali.

Ugali is a popular Kenyan dish made from maize meal which is similar to cornmeal but features a coarser grain. Ugali is typically made by just adding boiling water to the maize meal then cooking until a smooth dough type ball or mound is achieved. 

"Ugali, also known as posho, nsima, papa, pap, sadza, isitshwala, akume, amawe, ewokple, akple, and other names, is a type of corn meal made from maize or corn flour in several African countries: Kenya, Uganda, Tanzania, Zimbabwe, Zambia, Lesotho, Eswatini, Angola, Mozambique, Namibia, DRC, Malawi, Botswana and South Africa, and in West Africa by the Ewes of Togo, Ghana, Benin, Nigeria and Cote D'Ivoire. It is cooked in boiling water or milk until it reaches a stiff or firm dough-like consistency. In 2017, the dish was added to the UNESCO Representative List of the Intangible Cultural Heritage of Humanity, one of a few foods in the list." - Wikipedia

Join us as we check out some of our local agri-processors and other attractions at The TT Agri Expo 2024. 

"The TT Agri-Expo 2024 is strategically aligned with the Government of the Republic of Trinidad and Tobago's policy on strengthening the country's agriculture sector and reducing its reliance on imported foods, especially highly processed food. This initiative serves to build the capacity of the local food supply chain in an effort to improve food security and nutrition both locally and regionally. It highlights the important work and contributions being made by all stakeholders across the value chain.

Building on the success of the previous event, this year's Expo, themed 'Farm to Table: Revolutionising the Local Food Supply Chain', will primarily focus on the Exhibition segment and expand the scope to include additional elements such as competitions and an interactive Children's Activity area.

Key Objectives:
The main objectives of this Expo include;

To promote the importance of local food production and consumption for economic growth and food security.
To highlight the role of each stakeholder in the food supply chain, from producers to consumers, in supporting local agriculture.
To foster partnerships between farmers, processors, distributors, retailers, and consumers to enhance the efficiency and sustainability of the local food supply chain.
To showcase innovative approaches and best practices in strengthening the farm-to-table value chain."

Recipe 
Ingredients:
3 1/2 cups All Purpose Flour
2 tsp yeast
2 tsp sugar
1 tsp salt
2 tbsp vegetable shortening
1 cup lukewarm water

Method:
1. Combine dry ingredients.
2. Add shortening and water to dry ingredients then combine until a dough is formed.
3. Knead dough for 8 to 10 minutes.
4. Cover dough and allow to proof for 45 minutes.
5. Knock air out of dough then flatten into a 1/4" disc then roll tightly into a loaf, making sure to seal the seam at the base of the loaf.
6. Place into a loaf pan and allow to proof for 20 minutes.
7. Bake in a preheated oven at 350° for 30 minutes.
8. Allow to cool before cutting.

This is an updated version of my How To Make Hot Cross Buns recipe video that I streamed during the lockdown period of the pandemic. In this recipe I swap out some of the dried spices with Angostura Aromatic Bitters. Also subbed the lemon zest and orange/lemon juice with Angostura Orange Bitters.

Visiting the North Coast in Trinidad is more than just the beach and bake and shark. Fishing villages like Las Cuevas provide the community with fresh seafood on a daily basis. In this episode Chef Hasan grabs some fresh fish from the depot in Las Cuevas then stops off nearby in the village to do some outdoor cooking.
